主宰挨拶

私が「千葉県の太巻き」に夢中になって、早くも６５年経ちます。思うに「すし大国」の日本の西の岡山の祭りずし（バラずし）に対して、東の千葉の太い海苔巻きに「太巻き祭りずし」と名付けて、出版したのは昭和６０年（１９８５年）ですから、感無量です。

当時思っても見なかったほどの多くの人々に関心を持たれ、今日に至りましたが、多くは、後輩の栄養士達の協力によるもので、この事は、教師冥利に尽きる人生だったと思います。

人はそれぞれ欲があり、欲が人を育てるとも思っていますが、無名無形の財産（この場合は太巻き）を皆で協力して残す努力は並大抵のものではありません。ましてや「太巻きずしの造形」は、「技」として地域に残すものなので、多勢の人の協力があってこそ可能なのです。これを機会に、千葉県の農民の誇りを、正しく後世のために伝えてゆくことを誓い合わせて更なる努力をしてゆきましょう。

Eiko Ryuzaki’s Greetings

It has been 65 years since I first became engrossed with the “Futomaki of Chiba”. I wrote and published the first book about “Futomaki Matsuri Sushi ” in 1985.Many more people became interested in it than I could have imagined.Over the years, many capable subordinates, students, and fellow nutritionists have cooperated with me.How lucky I am to be a teacher loved by them.

The formative art of Futomaki Matsuri Sushi is a very special technique.We have to continue to develop, record and preserve the traditions and techniques of our the local people.We should make an effort to preserve Japanese traditions.

It is important to leave behind cultural heritage.I would like to kindly ask for everyone’s help and cooperation in this.

東京都生まれ。千葉伝統郷土料理研究会主宰。昭和２３年に（財）化学療法研究所付属病院(現国際医療福祉大学市川病院)に栄養士として勤務。昭和３２年からは、千葉県立栄養専門学院講師、千葉県立衛生短期大学（現千葉県立保健医療大学）栄養学科助教授を経て、現在にいたる。昭和３０年に房総地方の伝統料理「太巻きずし」に出会って以来、この技術の普及、創作、後進の育成に尽力。千葉県文化功労賞、ＮＨＫ関東甲信越地域文化賞、文部科学大臣表彰・地域文化功労賞などを受賞。

Profile: President Eiko Ryuzaki

She was born in Tokyo.

In 1948, she first worked at the Chemical Therapy Research Center Hospital (now International University of Health & Welfare Ichikawa Hospital) as a dietitian.Starting in 1957 to the present day, she has worked as a lecturer at the Chiba College of Nutritional Scienceand an Assistant Professor at the Chiba College of Health Science Department of Nutrition.(now Chiba Prefectural University of Health Sciences)

In 1955, she first encountered Futomaki Matsuri sushi of the Boso Peninsula.Since then, she has worked to spread, develop, and pass these techniques on to future generations.

She has received a number of public acknowledgements, including the Chiba Prefecture Cultural Achievement Award, the NHK Kanto-Koshinetsu Broadcasting Cultural Award, and Commendation for Regional Cultural Achievement by the Minister of Education, Culture, Sports, Science, and Technology.
